2 English cucumbers, sliced 1/4" thick
1/3 white onion, sliced
1/4 cup fresh dill, chopped
Dressing
1 cup plain Greek yogurt
3 tablespoons white balsamic vinegar
1 tablespoon olive oil
Salt to taste
Ground black pepper to taste
Rinse and pat dry cucumbers with paper towels. Slice each cucumber into 1/4 inch thick slices. Set aside.
Slice 1/3 white onion into thin slices and set aside.
Prepare creamy yogurt dressing in a bowl by mixing plain Greek yogurt, white balsamic vinegar and olive oil. Next, add salt and ground black pepper to taste. Mix well and set aside.
Combine cucumber slices, white onion slices and chopped dill in a large bowl, and toss well with creamy yogurt dressing. Add more salt if desired.
Serve immediately.
Peel and seed the cucumber for personal taste. It won't change the taste of the dish.
Using either whole milk or fat-free plain Greek yogurt will work for this recipe.
Serve within 30 minutes of making or the cucumbers get soggy.
